Potato Cauliflower Curry
Basic Indian curry common all over.
2 Potatoes peeled and cubed
I Cauliflower broken into small florets
1 tsp turmeric
2 tsp each of coriander and chilli powder
1/2 tsp each of cumin and mustard
salt to taste
2 tbsp oil
coriander leaves to garnish
1.Heat the oil in a pan with a lid.
2.Once hot add the cumin and mustard seeds. Let it splutter.
3. Add the potatoes and all the dried spices. Save the florets and salt.
4. Mix well, cover and cook for a couple of minutes.
5. Remove lid, add the florets and salt and mix well.
6. Put the lid back on a allow to cook for a couple of minutes.
7. Remove cover, stir, transfer to serving dish and garnish with coriander leaves.
Enjoy with warm roti and yogurt.
